Look into the extensions.cfg and train.dat files, they define these physical compositions. I suggest looking at the official documentation for OpenBVE found here:

train.dat: https://openbve-project.net/documentation_hugo/en/trains/train_dat.html
extensions.cfg: https://openbve-project.net/documentation_hugo/en/trains/extensions_cfg.html

Keeping in mind that both files need to have defined the SAME amount of cars , or else you will get white boxes as carriages :)

To further help you on editing the train cars lets use the R160 10 Car set as an example. Please note the following: (1) You should have extra copies of the files on hand incase something was to go wrong while you are working on it. (2) You need to have an understanding of how things work in openBVE as we only guide you and assist as far as you want to learn.

To edit your train you need to locate the following. The extension.cfg file located within your train folder and your train.dat file.

Once you have located those 2 files open the extension.cfg in a notepad or which ever software you use for editing regular text files. In the cfg file remove 2 of the trains. Then save it.
Open up train editor when you are finished and then locate the section on the top known as "properties" click on it and then look for "Number of MotorCars" once you located it reduce the number to 8. Save it and load BVE. Now you have 8 cars.
